A Passion For Thee...

How to Be a Godly Lady

   "How to be a godly lady" - sounds like the name of a book, huh? Yet it is something I have been wondering about for quite a while. For the most part, I viewed ladies as elegant women at least in their late 20's (or 30's) that were very refined, and to a point didn't do a lot of outside activities (besides tea and crumpet's, of course). And to tell the truth, drinking tea and eating crumpet's all day did not sound very interesting, at least for me. And to become a true woman of God also left me quite in a pickle, because it seemed like you had to do so much! But, let me back up a bit.         I have two older brothers, one is 7 1/2 years my senior and the other is 5 years my senior and no sisters. So, naturally, I grew up doing most of everything with them. Whatever they did, I did too. To a point I wanted to be exactly like them, between eating whatever they ate to playing whatever video game was popular to tagging along with them in whatever outs

Cranberry Nut Bread

Cranberry Nut Bread Ingredients: 2 cups organic whole wheat flour 1/2 cup raw honey, organic maple syrup, and/or organic molasses 1 1/2 tsp. aluminum free baking powder 1/2 tsp. baking soda 1/2 tsp. salt 3/4 cups coarsely chopped organic walnuts *1 cup chopped organic cranberries 3/4 cup orange juice 1/4 cup organic coconut oil 1 fresh egg 1 Tbs. grated orange peel Preheat oven to 350 degrees. Mix flour, honey, baking powder, baking soda, and salt in large bowl. Add walnuts and cranberries. Mix orange juice, coconut oil, egg and grated orange peel in small bowl. Add to dry ingredients. Stir with wooden spoon. Grease and flour loaf pan and bake for 55-60 minutes. *note: If using dried fruit, soak them in orange juice or water for 1/2 hour.

Whole Wheat Zuccini Bread

3 cups organic flour 1 tsp. sea salt 1 tsp. baking soda 1 tsp. baking powder 3 tsp. organic cinnamon  1 tsp. organic ginger 3 fresh eggs 1 cup organic olive oil 1 cup raw honey (if using sucanat or demerara, or any type of dry sugar, you might want to add an addition 1/4 cup since honey is sweeter than sugar) 3 tsp. organic vanilla 2+ cups grated  zuccini (I've used up to 4 cups of grated zuccini) Preheat oven to 325 degrees Grease and flour two 8in x 4in pans Beat eggs, olive oil, sweetener, and vanilla in large bowl. Add flour, salt, baking soda, baking powder, cinnamon, and ginger and mix. Lastly, add zuccini.  Bake 60 minutes or until toothpick inserted into the middle comes out clean. Enjoy! 

Blueberry Muffins

Where would the world be without Blueberry Muffins? One bite and your senses are saturated with blueberry goodness. And you know the best thing about it? They're made with good-for-you ingredients, so you don't have to worry about eating too many. ;-) Blueberry Muffins Ingredients: 3/4 cup raw milk 1/4 cup coconut oil (or olive oil) a little bit more than 1/4 cup of raw honey 1 fresh egg 2 cups organic whole wheat flour 1/2 tsp. salt 1 tsp. organic vanilla 1 tsp. organic cinnamon 1 cup organic blueberries (frozen blueberries work the best) Preheat oven to 350 degrees. Mix wet ingredients, than add dry ingredients. Fold blueberries into batter. Grease muffin pans and bake for 15-20 minutes. Enjoy! :-)

Whole Wheat Carrot Muffins

Whole Wheat Carrot Muffins ... doesn't that just sound healthy? They're delicious too. :) The muffins come out fluffy with a fine texture and they are only lightly sweet, which is what we were looking for. Ingredients: 1 cup plus 4 Tbs. organic whole wheat flour 1/4 cup raw honey 1 tsp. organic cinnamon 1 tsp. aluminum free baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/2 cup organic coconut oil (or olive oil) 4 Tbs. orange juice 1 egg 1 1/2 cup grated carrots 1/2 cup raisins In a large bowl, combine flour, honey, salt, soda, powder & cinnamon. In a small bowl, beat coconut oil, orange juice and egg on medium speed for 1 minute (mixture will not be smooth). Stir into dry ingredients just until blended. Fold in carrots & raisins. Coat muffin pans with cooking spray or use paper liners; fill half full with batter. Bake at 350 degrees for 20-25 minutes or until toothpick comes out clean.

Awesome Oatmeal Cookies

So, in our quest to eat foods that are good for us, we came across this recipe (well... I did tweak it a little bit). And OH! These are the best good-for-you oatmeal cookies I think I've ever had! Unlike most cookies where you eat two and immediately have a sugar over-load, these are so good for you, you can eat them like snacks. Seriously. I double this recipe and it lasts us a whole three days . And there's only three of us. I dare you to try them... you'll never go back to regular cookies again. :-) Awesome Oatmeal Cookies Dry Ingredients: 1 cup organic whole wheat flour 2 cups organic oats (any oats are okay) 1/2 tsp. baking soda 1/2 tsp. baking powder 1/2 tsp. salt 3 Tbs. organic cinnamon (We love cinnamon. You can add less if you want). 1/2 tsp. organic nutmeg 1 tsp. organic ginger a pinch of cayenne pepper (I know, I know, it sounds crazy, but it actually works in this recipe.) 1 Tbs Chia seeds (optional) 1/2 cup sunflower seeds (optional) We

Spice Bread

Our family loves sweet bread's. A lot. But, given a choice between Spice Bread or Pumpkin Bread , it's pretty hard to choose between them . They're both so delicious! You'll just have to try them both out and see which one you like best. ;)  3 cups organic whole wheat flour 1 1/4 cup raw honey 1 tsp. baking soda 1 tsp. baking powder 1/2 tsp. salt 1 1/2 tsp. organic cinnamon 1 tsp. organic ginger 1/2 tsp. organic nutmeg 1 1/3 cup buttermilk 1/2 cup organic coconut oil or organic olive oil 3 eggs 1 Tbs. organic molasses (optional, but it makes the bread more moist) Blend all ingredients in large bowl. Batter may be too wet so add up to 1/2 cup more flour. It is better that the batter be too wet and have to cook longer, then too dry. Grease and flour one 8" round pan or two 8" x 5" loaf pans. Bake on 310 ° or until inserted toothpick comes out clean. Enjoy!

Chocolate Powder Cookies

Once upon a time, there was a brother who loved chocolate chip cookies. I mean loved them. Fresh-and-burning-hot-out-of-the-oven-type-of-love. But then, the truth was known about how disastrous white sugar is to the body, and no more was the chocolate smelled in our kitchen. *sob* But, there has always been a hope, a faint glimmer of light, that one day, chocolatey goodness would be baked again. Okay, maybe it wasn't that dramatic, but chocolate cookies were a must have in our house. Especially around my brother's Birthday, but they were not limited to that occasion. So, recently I was baking something for someone and my brother came into the kitchen, "Can you make some chocolate cookies?" You could hear the desperation in his voice. "If I find you a recipe for healthy chocolate cookies, will you make it?" I agreed. He went and started searching on his computer, and I started searching on mine. Whole Wheat Pumpkin Bread

It's delicious. 'Nuff said. Delectably moist with just the right amount of spices, its definitely my favorite bread to make and eat. Especially after playing volleyball for several hours. You know you want some..... Whole Wheat Pumpkin Bread Ingredients: 15 oz pumpkin puree 4 fresh eggs 1 cup organic extra virgin olive oil (you can use any type of olive oil you want, we use this because it's organic. Surprisingly, it doesn't alter the flavor.) 1 1/4 cup organic sucanat (or whatever good-for-you sugar I have at the moment - sometimes I use half sucanat and half honey) 1 Tbs. raw honey (omit if using honey as sweetener) 3 1/2 cup organic whole wheat flour (or spelt flour) 2 tsp. baking soda 1 1/2 tsp. salt 2 tsp. organic cinnamon 2 tsp. organic nutmeg 1/2 tsp. organic ginger 2 tsp. organic vanilla 1 Tbs. organic molasses Preheat oven to 310 degrees. Gingery Oatmeal Molasses Cookie

So, I've been wanting to make some cookies for a while, but we had too much food in the house. Can you imagine it!? We had too much food! It made me think about all the people in the third world countries that hardly have a bowl of rice a day... We had recently bought some ginger-snap cookies, and infused with the spicy ginger flavor, I thought I'd try this recipe: Gingery Oatmeal Molasses Cookie; hoping that it would sorta be like ginger-snaps. They weren't; they were in their own ball-park! According to my mom, "They taste like cookie granola bars". They were very soft and chewy, so don't make these if you want something crunchy. ;) I love chewy cookies, so they are great for me! I think I'll have to find another recipe for my mom and brother, though.... they're ginger-snap fanatics.... Also, they weren't very sweet, since the molasses is the only sweetener. Perfect if you want a "cookie snack", as we call them around here. ;)
