Awesome Oatmeal Cookies

So, in our quest to eat foods that are good for us, we came across this recipe (well... I did tweak it a little bit). And OH! These are the best good-for-you oatmeal cookies I think I've ever had! Unlike most cookies where you eat two and immediately have a sugar over-load, these are so good for you, you can eat them like snacks. Seriously. I double this recipe and it lasts us a whole three days. And there's only three of us. I dare you to try them... you'll never go back to regular cookies again. :-)

Awesome Oatmeal Cookies

Dry Ingredients:
1 cup organic whole wheat flour
2 cups organic oats (any oats are okay)
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
3 Tbs. organic cinnamon (We love cinnamon. You can add less if you want).
1/2 tsp. organic nutmeg
1 tsp. organic ginger
a pinch of cayenne pepper (I know, I know, it sounds crazy, but it actually works in this recipe.)
1 Tbs Chia seeds (optional)
1/2 cup sunflower seeds (optional)

Wet Ingredients:
1/2 cup raw honey
1/2 oil (coconut, or olive oil)
add about 1/6 cup applesauce to oil to make 2/3 cup total
1Tbs. molasses
2 fresh eggs
1tsp. organic vanilla

Yummy Ingredients:
1/2 to 1 cup organic raisins and/or organic cranberries
1/2 cup walnuts (optional)

Preheat oven to 335 degrees
Mix all wet ingredients first and then add the oatmeal to begin softening.  Add the rest of the ingredients to the batter. After mixing all ingredients, spoon should be able to stand up in batter.
Bake for about 15-20 minutes
