Whole Wheat Carrot Muffins

Whole Wheat Carrot Muffins... doesn't that just sound healthy? They're delicious too. :) The muffins come out fluffy with a fine texture and they are only lightly sweet, which is what we were looking for.




Ingredients:
1 cup plus 4 Tbs. organic whole wheat flour
1/4 cup raw honey
1 tsp. organic cinnamon
1 tsp. aluminum free baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup organic coconut oil (or olive oil)
4 Tbs. orange juice
1 egg
1 1/2 cup grated carrots
1/2 cup raisins

In a large bowl, combine flour, honey, salt, soda, powder & cinnamon. In a small bowl, beat coconut oil, orange juice and egg on medium speed for 1 minute (mixture will not be smooth). Stir into dry ingredients just until blended. Fold in carrots & raisins.

Coat muffin pans with cooking spray or use paper liners; fill half full with batter. Bake at 350 degrees for 20-25 minutes or until toothpick comes out clean.
